Koja Sobaya has made Miyako soba in Hirara since 1932 and still makes its own flat noodles by hand.

Koja opened in 1932 and the family still makes its noodles on site, so the bowls come with the thin, flat, barely curled strands that mark the Miyako style. The broth leans on bonito with pork underneath, and the menu runs from a plain bowl to the house Koja Soba, which one September 2026 reviewer ordered with everything on it. Tabelog reviewers in September and October 2026 describe people queuing half an hour before the 11:00 opening, so arrive early or after two. It sits on the Shimozato road about 4.4 km from Miyako Airport, so it makes an easy first stop after you build the bike.
