The restaurant began with the island vegetables of the village grandmothers, and its sets still come from its own fields: bitter, sticky, strongly flavoured greens that the Choju-zen packs into one tray. The Makachi-kumisoori lunch is the smaller version and changes with the season. A lunchbox in a cardboard box made to return to the soil is on the menu too, for eating by the sea nearby.
