Sawanoya in Toguchi, Motobu, makes its own wood-ash noodles and stews pork rib cartilage soft for the nankotsu soki soba most people come for.
The Motobu Tourism Association describes flat, chewy noodles kneaded with strained wood-ash water and a dark broth of pork bone and bonito with plenty of depth. The nankotsu soki is simmered sweet in sugar and soy until even the cartilage turns soft. Sawanoya stands a few doors from Kishimoto Shokudo, and when the Kishimoto line runs down the street it is the natural fallback. A July 2026 reviewer did exactly that and sat down at once, though a queue built behind them.
